Homemade Raw Apple Cider Vinegar

The benefits of raw apple cider vinegar or ACV are far too many to list.
Around my house, we use homemade raw apple cider vinegar for everything from cooking and cleaning to cold remedies and skin care.

When you buy the good stuff from the store it can get pretty pricey. Making homemade raw apple cider vinegar is super easy, can save you some money, and you will get even more of the touted health benefits from having a fresh batch.

If fresh ACV is something that you would like to have on hand at all times, as soon as you finish fermenting your first batch, you should start another one. That way you will have a nice rotation going, and will never run out.

You Only Need a Few Things

  • 1/2 gal glass jar
  • Wooden or plastic spoon
  • 4-5 C chopped apples or apple scraps
  • Sugar (preferably organic)
  • Coffee filter or cloth
  • Rubber band or tie string
  • Raw vinegar with the mother

You probably already have most of these things laying around your house and can get started right away. If you only have quart jars, you can easily cut this recipe in half or divide between two jars.

Save Your Apple Peels and Cores

Making homemade raw apple cider vinegar is a great way to eliminate waste in your kitchen. If you make something that calls for apples, save your peels and cores in the refrigerator to use for your vinegar.

I killed two birds with one stone and made applesauce for my daughter (also super easy). If you are impatient, you can also just use whole apples chopped into large pieces.

Go ahead and fill your jar 3/4 of the way full with your scraps or apple pieces.

Mix some of the water with the sugar or molasses until mostly dissolved. It is best to only mix with about 1-2 cups of the water because it is difficult to predict exactly how much liquid you will need. Every batch you make will be unique.

Very Important!

Do not use metal spoons or bowls while mixing or making your homemade raw apple cider vinegar! Glass, wood, and plastic only.

Once you have almost completely dissolved the sugar, pour your mixture into the jar with the apples, and add a couple of tablespoons of your raw apple cider vinegar with the mother.

The mother is the slimy floater that you see in raw apple cider vinegar. Braggs (this is not an affiliate link) always seems to have a little bit of the mother floating around in it, and is a good product. You can find it at most grocery or health food stores.

If you don’t have any of this, it’s fine without it. Your vinegar will still ferment, but it may take a little longer.

Next, weigh the apples down until they are completely submerged under the water.

I like to use a fermentation weight like the one below because it fits right into the jar and you can easily adjust or remove it. There are however cheaper options. A zip-lock bag filled with water or rocks can also be used4 as a weight.

When making any kind of vinegar, a weight is optional. Since you will be stirring the vinegar almost every day, it is ok to allow the fruit to float to the top.

You’re almost done. Grab your coffee filter or cloth and secure it over the top of the jar to keep fruit flies and dirt out. Secure with a rubber band or string, and set in a dark place at room temperature for about 3 weeks.

Now We Wait…

Try to stir your vinegar daily. This will prevent mold from forming on the top of the liquid. If some does form, skim it off with a non-metal spoon and let the vinegar continue to ferment. Once it becomes acidic enough, the mold will no longer be able to form.

when 3 weeks have passed, strain out the apple pieces, transfer the liquid back to the jar, cover again, and place back in the dark area for another 3-4 weeks. Taste the ACV to check for desired tartness.

When your ACV is finished it will have formed a mother. It looks gross, but it is supposed to be there, and you can use it to add to your next batch and make it even better.

As you can see, homemade raw apple cider vinegar is super easy to make, and can be used in lots of recipes, household chores, and even in your skin care regimen. All you need now is a little patience, and in the end, you’ll be rewarded with all the benefits that ACV has to offer.

Raw Unfiltered Apple Cider Vinegar

Homemade raw apple cider vinegar is great for cooking, cleaning, and even skin care. Make this homemade ACV recipe for a fresh batch of your own.


  • 4-5 Cups of Apple Scraps or Chopped Apples
  • 1/3 C Sugar
  • 5-6 Cups Filtered Water



Fill a half gallon jar ¾ of the way with chopped apples or apple scraps.


Dissolve sugar in about 2 cups of the water with a wooden or plastic spoon (do not use anything metal).


Pour the sugar water into the jar, then fill with remaining water or until there are only 1-2 inches left at the top of the jar.


Using a fermentation weight, smaller glass jar or zip-lock bag full of water, weigh the apple scraps down so that they are completely submerged in the sugar water.


Cover the top of the jar with a cloth or coffee filter and secure with a rubber band or string.


Place jar in a dark place (a pantry or under the sink are good options) at room temperature.


Allow sitting for about 3 weeks, checking every couple days to make sure the apples are still submerged.


After 3 weeks, strain the apple pieces out, return the liquid to the jar, cover and allow to sit in a dark place for another 3-4 weeks.


Stir every few days.


When the vinegar is tart enough for your preference, transfer to a different jar and place a lid on top for storage.


Store at room temperature.


Do not use anything metal because it tends to react with the vinegar. Molasses is a great alternative to sugar, and will add beneficial minerals to your vinegar.
